Chocolate Fairycakes/ Cupcakes (Vegan! Free From: Dairy, Egg, Gluten, Soya, Nut & Peanut)  


These are such a great food to have at a party, you can even make an activity of it and do a cupcake decorating party! 

When my sister in law first told me that she wanted my Nephew’s Birthday party to be a ‘cupcake decorating party’ my heart sank and I started to panic…But she later went on to say that she wanted it to be allergy friendly so his Cousins could take part……I was bursting with joy, in fact I nearly cried! (How thoughtful is that! ) 

Not only is a great activity for parties, but great to take a cupcake along to other people’s parties. I’m not sure what you do when you go to a kid’s party, but I will always take a (subtle) cupcake for my kids. (If I can find out what colour the cake is that is being served I will try and do that). 

INGREDIENTS (Makes 20 Fairy cakes)

FAIRYCAKES

  • 210g Gluten Free Self Raising Flour (Doves Farm Flour)
  • 20g Cocoa powder (Tesco Cocoa Powder is dairy free)
  • 200g Sugar
  • 1/4 tsp Cinnamon
  • 1 tsp Baking Powder (Dr. Oetker)
  • 1 tsp Vanilla Extract
  • 90ml Vegetable /Sunflower oil
  • 1 Tbsp Cider Vinegar
  • 220ml Water

FROSTING:

  • 100g dairy free butter, softened
  • 150g icing sugar
  • 50g cocoa powder, sifted
  • 1-2 tbsp dairy free milk

 If you cannot have cocoa (or just want less chocolate), use another 50g of icing sugar and add 1tsp vanilla extract) 
 

METHOD

  1.  Get the dairy free butter out the fridge for your frosting 
  2. Set your oven to 180C
  3.  Sieve flour & cocoa powder, then add sugar, cinnamon & baking powder and mix.
  4.  Make three separate wells (holes) in the dry mixture
  5. Pour in vanilla extract in one hole, the oil into another hole and finally the cider vinegar in the third hole
  6. Pour the water over the top
  7. Mix all ingredients with a fork
  8. Put your fairy cake paper cases inside a muffin tray (to support them) , 
  9. Spray with sunflower oil to grease
  10. Dollop in your mixture just over 2/3rds full (using an ice cream scoop if you have one)
  11. When a toothpick comes out clean, it is done. (Fairycakes about 15mins, Cupcakes about 20 mins) 
  12. Let them sit on wire rack to cool whilst you make your frosting:
  13. Mix all frosting ingredients using a mixer adding the milk in last and gradually
  14. Either spread frosting on the top or use a piping bag.
