Don’t throw the seeds out after you’ve carved your pumpkin….They are so good for you!
- Preheat oven to 190
- Boil the pumpkin seeds for 10-15 mins to soften
- Toast in the oven with oil & flavour with whatever you fancy: salt, paprika, chilli , garlic, cinnamon or even bacon. (I went for plain old salt).
- Bake for about 25-30 minutes
My little boy LOVED them & said they were like crisps! (A bit of a choking hazard for my youngest so I chopped finely for her).
I will definitely be doing more with pumpkins over the winter. The cupcakes & toasted seeds have gone down amazingly in our house! And it’s nice to know they are full of goodness!
