Gingerbread Bisuits 

I sometimes buy the Organix gingerbread men biscuits as a treat for my daughter when my little boy is in nursery.  (Because they contain wheat, he can’t have them.)

After recently making biscuits again and remember quite how easy they were, I thought I’d just adapt the recipe to make them into gingerbread men! 

Gingerbread biscuit decorating will  give us an activity for this afternoon (as the weather is looking a little miserable).




 (Makes 10-12 Gingerbread men)

Ingredients:

  • 100g caster sugar 
  • 200g dairy free butter/ spread 
  • 300g gluten free plain flour 
  • 4-5tsp Groung Ginger
  • 1-2 tsp Cinnamon 
  • Splash of almond milk 

Get ready for your kitchen to smell DELICIOUS 😋 

Method:

  1. Preheat oven to 160C
  2. Cream together butter, vanilla & sugar 
  3. Sieve flour into the bowl and mix
  4. Use hands to mix it together and form a dough 
  5. If it’s still too dry, add a TINY splash of almond milk (or other milk substitute)
  6. So long as you haven’t overworked the dough too much you might be able to get away with skipping this step (if you are in a rush!) Put dough into a sandwich bag and then into a bowl and cover with cling film 
  7. Leave in fridge to cool for about 30 mins (the longer you can leave them the easier it will be)
  8. Use two sheets of baking parchment to roll out your dough inbetween
  9. Use gingerbread men cutters and carefully place on baking parchment (as you can see I’m in desperate need of a new cutter!)
  10. Bake in the oven for 10-15 mins (or until slightly turning golden brown at edges )
  11. Put on wired rack to cool

Topping ideas 

  • Marshmallows (Holland & Barrett have vegetarian mini marshmallows!)
  • Dairy free melted chocolate
  • Coloured strand / sprinkles (double check the back as some contain milk)
  • Wine gums (Sainsbury’s do a vegan “jellies” version)
  • Skittles
